Guys I'm sorry but I've just had meetings set up on Tuesday night that I can't get out of.
I could come until about 9ish but then need to head home.
If there was anyone on the waiting list then feel free to take my place otherwise I'll turn up for a bit.

The restaurant closes at 10pm (hence the 6:30pm start) so dinner will likely be wrapped up and we would likely be wrapping things up as well. 9redpens put himself in at first drop so I'll contact him about taking your place.

Do you have an idea when you would be likely to arrive? Just so we know what's going on and how long to wait for food to start etc. Pity you'll be missing out on the fizz! Although I'm sure there'll be a little bit left.

I'm confirmed.
I am however a bit concerned about restaurant closing at 10pm, memories of Xage. Wines will need to be flying past pretty quick I would think.

Not ideal but it should be okay if we pace ourselves accordingly, particularly if we know how much time we have beforehand. If everyone brings one or two wines and we do flights of 2/3 wines at a time we should be fine.

I don't think they kick you out at 10 at the Devonshire...I don't remember it being like that last time we were there...Last offline we had there I'm pretty sure we left well after 11...Can we call them and find out?
10pm is possible..but we have stay on task and go through them at a good pace..

I don't like having to leave @ 10 either. it is going to be too rushed. Can we find out if we can stay longer?

That would be my guess...I don't think I've ever seen a restaurant that has a degustation menu kick people out at 10. I think they'd have closed down by now if that was the case..

Okay so after chatting to the restaurant they confirmed that 10pm is not when they kick us out, but when the kitchen closes, so all good there.
Unfortunately they can't change the degustation menu, which is a shame but the good news is the food sounds bloody good already. I'm going to swap one of my reds over for a dry white of some description seeing how there are so many reds being brought and to match something up to the beginning of the menu.

Don't worry too much about matching the menu..it all ends up working out ok.
A lot of Pinots can go with Fish dishes as well so we will definitely be ok...
To give you an idea...When we did the Judgement of Sydney wine thing there...it was all reds...It isn't an ideal food match but the food takes a back seat anyways...

True, but I still want to bring up the white end of the spectrum. Still bringing the Hoddles to keep the vertical going. I'll take the Thousand Candles to the Pinot offline instead. It's a Pinot blend so it still counts.

They've agreed to giving us two glasses per person. From memory they're entry level Riedels. If you have your own zaltos and want to bring them then by all means do, just means more glasses to go around. If anyone wants to bring spittoons or things like that then do so as well. I'll bring an ah-so for any old corks.
