Essential elements of red wine - Growing tips

It was worth staying awake through a two day training course on such riviting subjects as irrigation, hydrology and soil management because I picked up some great tips for growing two essential ingredients of red wine - Chillis and Tomatoes !!
Never again will I:
* Water my chill or tomato plants in the dark (Plants shut down at night and actively drink in the day, proably triggered by sunlight).
* Water them while its windy (The plant shuts down and won't drink)
* Overwater my plants and saturate the soil (Essentially the plants shut down and cannot take in water. They actually go into stress when you saturate the soil because there is no oxygen left (an essential component they ned to extract water from the soil))
